  3. Put butter in a coated pan. You can also use rapeseed oil or margarine, but the scrambled eggs develop a particularly delicious aroma when fried in butter.
  4. Now slide the egg mixture into the hot pan and let it sit briefly. Then push it back and forth with a spatula. There is no right or wrong. A few minutes are enough. The longer you leave the scrambled eggs in the pan, the drier it will be. Find the ideal cooking point for you.

Ingredients for 1 serving:

  • 1 tbsp green pesto
  • 1 red pepper
  •  1/2 red onion
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 2-3 eggs

Preparation:

  1. Finely chop the bell pepper and onion, then mix both with balsamic vinegar and olive oil.
  2. Whisk the eggs in a glass, season with salt and pepper and add the pesto. Put the egg pesto mixture in a hot, non-stick pan and stir-fry for 2 to 3 minutes. You don’t need any extra butter to fry because the pesto contains oil.
  3. Finally, briefly add the tomato mix, done.
  4. Hearty scrambled eggs with salmon

Ingredients for 1 serving:

  • 2-3 eggs
  • 2 Tablespoons of milk
  • 50 g smoked salmon
  • 1 teaspoon chopped chives

Preparation:

To ensure that the eggs are fluffy and the salmon does not cook too much, remove the pan from the stove in good time. Serve sprinkled with chives.

  4. Scrambled mushroom eggs on wholemeal bread

Ingredients for 1 serving:

  • 100 g mushrooms
  • 1/2 red onion
  • 2 eggs
  • 2 Tablespoons of milk
  • 1 teaspoon butter
  • salt and pepper
  • 1 teaspoon parsley
  • 1 slice of whole-grain bread

Preparation:

  1. Clean the mushrooms and cut them into slices. Dice the onion or cut it into half rings.
  2. Melt the butter in a pan—fry the onions and mushrooms in it for a few minutes while stirring.

Ingredients for 1 serving:

  • 1 onion
  • 1 tomato
  • 1 pinch of chilli flakes
  • 1/2 cm ginger
  • 1 clove of garlic
  • salt and pepper
  • 1 teaspoon butter
  • 2-3 eggs
  • 1/2 teaspoon turmeric
  • 1 stalk of coriander

Preparation:

  1. Chop the onion, tomatoes and ginger, press the clove of garlic. Mix everything with chilli flakes, salt and pepper.
  2. Then heat the butter in a pan, then add the chopped ingredients and heat the whole thing.
  3. Then break the eggs, whisk, mix with turmeric, salt and pepper and add to the vegetables in the pan.
  4. Once done, place the scrambled eggs in a bowl and garnish with coriander.
  5. Scrambled shrimp eggs with tomato

Ingredients for 1 serving:

  • 1 large tomato
  • 2 spring onions
  • 1/4 red onion
  • salt and pepper
  • 1 clove of garlic
  • 2 eggs
  • 1 shot of sparkling water
  • 75 g of crabs
  • 1 teaspoon butter

Preparation:

  1. Roughly dice the tomatoes, peel and finely chop the onion. Cut the spring onions into thin rings. Press the garlic. Mix all ingredients and season with salt and pepper, set aside.
  2. Whisk the eggs with salt, pepper and sparkling water. Melt the butter in a pan. Put the egg mixture in the pan, let it sit for about 15 seconds and stir-fry for 2 to 3 minutes. Add the crabs, fold in.
